Saves time and money, not to mention you have more veteran troops. Surviving units will heal and keep their experience. Suffering less losses overall means your units are less likely to be destroyed. The other big reason to use armor is the survivability aspect. Adding armor helps mitigate their one real weakness, making them far less susceptible to arrows in particular. Monks trade armor for high damage and morale. Katana and Yari Samurai will hold the line against damn near any foe. Melee units that already have strong armor become very hard to stop. Strong armor allows cavalry to charge formations with fewer loses, allowing them to break enemies and scatter them with greater ease. Melee units need the armor far more though. Even ranged units benefit well from armor, as it allows them to soak up more missile fire meaning fewer casualties, meaning less overall morale damage from dead troops and more soldiers to return fire.
